Pumpkin Apple Oat Bread
I don’t know about where you live, but here in Korea fall is in full swing! A crisp chill is in the air and leaves are beginning to change into those amazingly beautiful colors………I actually needed a BEANIE leaving the house one morning this week, and I wasn’t the least bit sad about it!!!! Needless to say, I am in full on PUMPKIN mode! I love pumpkin year round, but during this time of year the pumpkin and spices baking aroma filling the kitchen is like a warm hug. I needed a bread that just SCREAMED fall, and I think this does just that with the pumpkin, apples, spices, and oats!! We made it twice this week alone, so I am calling it a hit!
Pumpkin Apple Oat Bread:
- 1 cup pure pumpkin puree 
- 1 cup shredded apple 
- 1/2 cup olive oil 
- 1/2 cup honey 
- 3 eggs 
- 1 teaspoon vanilla extract 
- 1 1/2 teaspoons baking powder 
- 1 1/2 teaspoons baking soda 
- 1/2 teaspoon ground clove 
- 1/2 teaspoon ground ginger 
- 1/2 teaspoon ground allspice 
- 1 teaspoon ground cinnamon 
- 1 1/2 cups old fashioned/rolled oats 
- 1 1/4 cups white whole wheat flour - *optional- you could add 1/2 cup chopped walnuts 
Preheat oven to 375* and line a large loaf pan with parchment paper. Shred apple using a box grater until you have 1 cup, approximately one larger size apple. In a large mixing bowl combine the shredded apple, pumpkin puree, olive oil, honey, eggs, and vanilla using a fork or whisk. Add spices, oats, and flour; continue mixing until combined. Pour into prepared loaf pan; bake at 375* for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let bread cool before removing from the loaf pan and cutting.
