Arugula Pesto
Arugula Pesto Recipe:
- 3 cups arugula, packed down tightly 
- 1 1/2 cups basil, packed down tightly 
- 6 cloves garlic 
- 3/4 cup garbanzo beans 
- 1 teaspoon each freshly ground salt and pepper 
- 1/2 cup parmesan cheese 
- 1 teaspoon lemon zest 
- 1 tablespoon lemon juice 
- 1 1/2 cups olive oil 
- Place all ingredients EXCEPT 1 cup of olive oil into a food processor or blender, begin pulsing to work ingredients together while slowly adding in remaining olive oil 
- Continue blending until smooth and creamy (more oil can slowly be added if necessary) 
- Use immediately or refrigerate until ready to use 
This pesto is great served on pasta, on sourdough bread, or used as sauce for pizza!
